Ingredients:
- 2 dozen fresh oysters, shucked
- 1 cup of chopped spinach
- 1/4 cup of green onions, chopped
- 2 cloves of garlic, minced
- 2 tbsp of butter
- 1/4 cup of breadcrumbs
- 1/4 cup of grated Parmesan cheese
- 1 tsp of lemon juice
- Salt and pepper to taste
Instructions:
- In a pan, melt 2 tablespoons of butter over medium heat.
- Add in 1/4 cup of chopped green onions and 2 cloves of minced garlic. Cook until fragrant.
- Add in 1 cup of chopped spinach and cook until wilted. Remove the pan from heat and let it cool.
- In a food processor, combine the cooked spinach mixture, 1/4 cup of breadcrumbs, 1/4 cup of grated Parmesan cheese, 1 tsp of lemon juice, salt and pepper to taste. Blend until smooth.
- Spoon a small amount of the spinach mixture onto each shucked oyster and place them on a baking sheet.
- Bake the oysters in the preheated oven for about 10-12 minutes, or until the topping is golden brown.
- Serve the oysters hot, with a sprinkle of breadcrumbs on top.
